Salmon & Avocado Burgers with Wasabi Mayo

On Saturday night I made my new favourite burger along with a spontaneous Japanese Rice Salad and a Wasabi-Lime Mayo that just took it over the top. This is the kind of meal you could start a restaurant on...


Spontaneous Japanese Rice Salad

When I am creating in the kitchen I don't really measure much unless I am baking. So, to tell you the truth I am guessing a bit when I put this recipe in writing for you. Here goes!


2 cups brown rice- cook it.


OOOOH WAIT...This would be a good time to marinate your salmon so...


Salmon Marinade

The Chatelaine recipe did not involve a marinade and it is delicious as is. But if you are into adding a twist you can marinade your salmon before starting on the burgers. I left the fish soaking in this for a couple of hours in the fridge.

Equal parts soy sauce and brown sugar (1/3 cup each?)

1 tbs ginger

juice of half lime

Cube the salmon into 1/2 inch pieces and soak in marinade for at least 1 hour.



OK Back to the salad...


Rice Salad Dressing

1/4 cup soy sauce

juice of 1 lime

1 tbs minced ginger

1 clove minced garlic

1 tsp brown sugar

1/2 - 1 tbs sesame oil

1/2 - 1 tsp red chile flakes

Mix all ingredients together and set aside until ready to assemble salad


2 cups steamed edemame beans

1 red pepper diced

1/2 long english cucumber diced

2 carrots diced

2 tbs toasted sesame seeds


Combine rice & veggies into a large bowl. Pour dressing over top and toss together. Top with sesame seeds. Add more lime if desired.


Wasabi-Lime Mayo

2tbs mayo

1tbs wasabi paste

juice of 1/2 lime

mix together...woah!


Salmon & Avocado Omega Burger (from Chatelaine Magazine)

Makes 4 burgers

500g fresh salmon fillets- cubed 1/2 inch pieces

1/2 avocado - cubed 1/2 inch pieces

1 green onion diced

3 tbs flax meal ( I used finely ground almonds instead)

1 egg

1 tbs lemon juice

2 tbs finely chopped fresh dill ( cilantro would be good too)

1/2 tsp salt & pep

Gently mix everything together, adding more flax if mixture seems too wet.

Preheat pan over medium, lightly oil and fry 1/2 cup patties until golden brown on both sides.


Full Meal Deal

Start with 1/2 cup fresh mixed greens in your bowl. Then add 1/2 cup rice salad. Complete with a salmon burger and a dollop of wasabi mayo.
