Good For You Granola

Once you make granola at home you will never buy it again. It takes minutes to make, is WAY healthier than the fat and sugar loaded versions in the stores and costs a fraction of them as well. You can make a batch for the week in less than 20 minutes from start to finish.

GOOD-FOR-YOU GRANOLA

4 cups large flake rolled oats

1.5 cups additional grains - quinoa, wheat germ, bran buds, flax seeds etc

1.5 cups nuts or seeds - slivered almonds, sunflower seeds, pumpkin seeds, pecans, sesame seeds etc.

.25 cup veg oil

.25 cup honey or maple syrup

.5 cup fruit juice or water

Optional : 1 tsp vanilla or almond flavor

Optional: 1 tbs cinnamon or other spice

1 cup dried fruit chopped - raisins, dates, apricots, cranberries etc


Preheat oven to 350 degrees.

Toss oats, grains, nuts and seeds together.

Heat the oil and sweeteners together and pour over the oat mix.

Mix and spread on cookie sheets in thin layer.

Bake 10 minutes then stir and check ever 5 minutes until you like the colour- watch it like a hawk so you don't burn it!

Let cool then stir in dried fruit. Store in airtight container for a week.


For breaky this week I have been eating coconut, sunflower seed, pumpkin seed and date granola:) on top of a big bowl of blueberries, plain organic yogurt and drizzled with a bit of maple syrup. Yum!
